Kilchoman Casado 2022
Nose: Campfire smoke with dried apricot and some coastal salinity, as well as notes of marzipan and caramelized apples. Palate: Ground black pepper on smoked fish, then lemon peel, tannins from the wood and stone fruit. There is also a sweet element of jam. Finish: The aromatic spice and tartness of the red berries persist.
Kilchoman, an Islay farm distillery, kept a portion of its heavily peated distillate and aged it for six years in 38 first-fill ex-bourbon casks before marrying it for another two years in two vats that held 6,000 liters of Portuguese red wine with medium-high charring levels (two and three). This late 2022 release was then bottled at 46% ABV per Scotch Whiskey Association regulations, with no additional colorants or filtering.
