Lustau Pedro Ximenez San Emilio
To balance the sweetness, serve at 10°/12° with lightly baked fruit cakes with slightly sweet pastries. Great with vanilla or hazelnut ice cream, or poured directly over ice cream to make one of the world's best affogati. It also goes well with tangy blue cheeses, as well as with goat's or sheep's milk. Because of its high density and large amount of sugar, which can be further concentrated, it is ideal for replacing sugar in an old fashioned or sour. Also excellent in cooking to balance sweet and sour sauces and concentrate cooking sauces.
Pedro Ximenez San Emilio is produced at the Lustau winery in Jerez de la Frontera. The grapes are harvested when they are partially overripe and dried on mats of various materials. The clusters are moved periodically to allow the sun's rays to reach all the berries, at the same time workers discard any clusters that are damaged or unsuitable for drying in the sun. Fermentation begins naturally and slowly, but is interrupted by the addition of alcohol until it reaches 10°, to avoid unwanted bacterial attacks. The slightly fortified wine is left to settle naturally throughout the winter. It is then fortified until it reaches 17°/18°, to be ready for transfer to cask.
