Kilchoman Machir Bay Cask Strength 2021
The aroma opens with fruity notes, typical of Kilchoman's distillate, distinguishing intense waves of green apple from candied tropical fruits. Notes of peat smoke are persistent, forming the backbone of this bottling. The palate feels really rich, especially the citrus notes of lemon and orange peel. As the whisky opens, it reveals a honeycomb sweetness, which gives way to a milk chocolate profile, by virtue of bourbon maturation. The finish holds light aromas of black pepper and nutmeg, while the oily texture enhances the influence of smoke. Overall, this is a unique balance of heavily peated malt, slow distillation and wood input.
Kilchoman Machir Bay is the result of a cask blend composed of 90% ex-bourbon casks and 10% ex-sherry casks. It is bottled at 58.3% vol, has no stated age, is not colored and is not cold filtered. Gold medal winner at the 2019 San Francisco World Spirits Competition. This limited edition of 18,828 bottles is made using the same recipe as Machir Bay, with the exception that the alcohol content has been kept at 58.3%, cask strength, rather than being reduced to 46%. The higher strength makes the quality and intensity of Kilchoman's distillate more evident, resulting in a truly explosive blaze.
