The Kilchoman distillery was founded in 2005 by Anthony Wills and stands out for being one of the few farm distilleries on the island, meaning that part of the barley used for whisky production is grown directly on its own fields. Kilchoman is well known for its artisanal and traditional approach.
The Kilchoman Sanaig Cask Strength 57.8% is a heavily peated single malt Scotch whisky, matured in a mix of ex-bourbon and ex-sherry casks with a predominance of the latter. This whisky was finally bottled at cask strength (57.8% ABV), non-chill filtered and with its natural colour.
Nose: intense peat, red fruits and raisins, orange zest, vanilla and caramel, with notes of dark chocolate and sweet spices.
Palate: rich and concentrated, with enveloping peat smoke, dark fruits, honey and sweet malt, followed by cocoa, caramel, ripe citrus and pepper.
Finish: long, warm and smoky, with returning notes of dried fruit, chocolate, spices and a light saline touch.
