Kilchoman Fino Sherry Cask Matured 50%

Kilchoman is no stranger to releases matured exclusively in ex-sherry casks. It is likely that the spirit produced by the distillery is particularly well suited to this type of maturation, or perhaps Kilchoman is simply experimenting to see how its distillate behaves with different cask types. For the average enthusiast, however, this matters only to a certain extent — what truly counts is what ends up in the glass, and the quality of Kilchoman is rarely in question.

The Kilchoman Sherry Fino Cask Matured 2023 Release is a peated single malt Scotch whisky with no age statement, matured exclusively in ex-Fino Sherry casks from the Spanish winery Bodega Jose Miguel Martin. More precisely, the release comes from 20 sherry butts filled with spirit distilled in 2018. This whisky was bottled in a limited edition of 15,650 bottles at 50% ABV, without chill filtration and with no added colouring.

The Kilchoman Sherry Fino Cask Matured 2023 Release, produced by the Kilchoman distillery on the island of Islay, combines the distillery’s typical peat with the drier and more saline notes imparted by Fino sherry casks.

Nose: fresh peat, almond, lemon zest and green apple, with notes of sweet malt, toasted bread, vanilla and a hint of sea breeze.
Palate: lively and structured, with elegant peat smoke, fresh citrus, almond and sweet malt, followed by light honey notes and delicate spices.
Finish: medium-long, dry and smoky, with returning notes of citrus, almond, white pepper and a subtle salinity.
